As far as I am aware everyone who has been accepted to an Australian school that can provide the right documents has the right to apply for a student visa. There is no rule saying that you have to apply directly after high school. When you apply for a visa you primarily have to prove that you have enough money to support yourself and that your primary purpose is to study. If asked you should also be prepared to describe what you have been doing during your gap.
